It's 3 a.m. on a Tuesday at 7300 North Aliante Parkway. You can order a farm loco moco, strawberry shortcake French toast, or an island breakfast with Portuguese sausage or Spam, and the stage next to the bar is waiting for the next live set. That kitchen belongs to Render Modern Kitchen, which Boyd Gaming announced in October as a 24/7 gastropub inside Aliante Casino + Hotel + Spa.
Render is the newest step in a remodel that Boyd calls a "property-wide reimagining." The changes have come one room at a time all year, and together they have changed how the property runs across a full week. One kitchen never closes. The two sit-down dinner restaurants now open on different nights, so the day you go decides which one you can eat at. For anyone living within a few minutes of Aliante Parkway, that schedule is the most useful thing to know about the remodel.
The Room That Runs All Night
Boyd's announcement of Render Modern Kitchen describes a dining room with patina brick walls, steel details, dark walnut paneling and art inspired by street culture. A custom bar sits in the middle with a performance stage next to it, and large TVs hang around the room. It serves breakfast, lunch, dinner and an overnight menu every day. Breakfast is served all day, including country-fried steak and eggs and buttermilk pancakes with 100% Vermont maple syrup.
The rest of the menu leans toward food you share or eat after a long day. There are poke nachos on wonton chips, candied bacon with a maple bourbon dip, wagyu sliders and hand-stretched 12-inch Neapolitan-style pizzas. Larger plates include roasted prime rib, Cajun pasta, Scottish salmon and beef short ribs. On the drink side, look for the desert loom, made with prickly pear and mezcal, along with a blackberry bourbon smash and a smoked old fashioned. A separate zero-proof menu offers alcohol-free botanical and citrus drinks.
Aliante's own Render page lists the hours as 24 hours, every day. That makes it the property's only sit-down restaurant that serves every hour of the week.
Two Dinner Rooms, Two Different Weeks
Most of the change shows up at dinner. MRKT and Trattoria 57 are the property's two dinner-only restaurants, and their days off don't overlap. According to Aliante's dining pages, MRKT is open Tuesday through Thursday from 4 to 9 p.m. and Friday and Saturday from 4 to 10 p.m., and it closes Sunday and Monday. Trattoria 57 serves from 4 to 9 p.m. on Thursday, Sunday and Monday and from 4 to 10 p.m. on Friday and Saturday, and it closes Tuesday and Wednesday.
Here is how the full lineup looks across a week, based on the hours on Aliante's site:
| Day | Render Modern Kitchen | MRKT | Trattoria 57 | The Salted Lime |
|---|---|---|---|---|
| Monday | 24 hours | Closed | 4–9 p.m. | 4 p.m.–7 a.m. |
| Tuesday | 24 hours | 4–9 p.m. | Closed | 4 p.m.–7 a.m. |
| Wednesday | 24 hours | 4–9 p.m. | Closed | 4 p.m.–7 a.m. |
| Thursday | 24 hours | 4–9 p.m. | 4–9 p.m. | 4 p.m.–7 a.m. |
| Friday | 24 hours | 4–10 p.m. | 4–10 p.m. | 4 p.m.–7 a.m. |
| Saturday | 24 hours | 4–10 p.m. | 4–10 p.m. | Noon–7 a.m. |
| Sunday | 24 hours | Closed | 4–9 p.m. | Noon–7 a.m. |
Only Thursday, Friday and Saturday have both dinner rooms open. If you want Italian on a Tuesday or Wednesday, Trattoria 57 is closed. If you want MRKT on a Sunday or Monday, it's closed too. The Salted Lime covers the late hours on its own schedule, opening at 4 p.m. on weekdays and at noon on weekends and staying open until 7 a.m. The Starbucks inside the property is open daily from 6 a.m. to 7 p.m. The food court lists Capriotti's, Johnny Rockets, Dairy Queen and Rubio's Coastal Grill.
What the Remodel Replaced
Part of the new lineup fills space left by older restaurants. VegasChanges reported that the TGI Fridays inside Aliante permanently closed on Wednesday, January 29, 2025, along with the chain's locations at three other Boyd casinos. A Boyd spokesperson told the outlet the company was "already working on exciting new concepts for these spaces."
Trattoria 57 kept a familiar number. Its OpenTable listing still carries descriptions from Bistro 57, the restaurant it appears to have replaced. Boyd says the "57" now honors the 57th Wing at nearby Nellis Air Force Base. The menu covers chicken piccata, house-made pastas, meatballs and a smothered Sicilian steak, plus rotating specials and popular wines by the glass.
Some older references haven't caught up yet. Aliante's movie theater page still suggests ending the night with pie at FARM, but FARM isn't listed in the property's current dining directory.
Game Nights Got Their Own Upgrade
Before Render opened, the sportsbook had already been redone. The Las Vegas Review-Journal reported on August 26, 2026, that Aliante had debuted its renovated race and sportsbook. Its 30-foot video wall can show up to 30 games at once in 20 different screen layouts, and the room has new booths, lounge chairs, couches and betting kiosks. The Review-Journal also reported that VIP booths and lounge areas for groups will soon be bookable through OpenTable, and each reservation comes with a food and beverage minimum.
On a Golden Knights night, ETA Lounge hosts VGK watch parties. It's open from 11 a.m. to 1 a.m. Sunday through Thursday and until 2 a.m. on Friday and Saturday. After 2 a.m., Render and The Salted Lime are still serving.
The Pieces Still Ahead
Boyd says more is coming but hasn't published dates. Its Render announcement lists these future changes:
- An upgrade at the property's movie theater to add the Regal Premium Experience
- More changes to the casino floor
- New beverage spots
- Other resort amenity updates
For now, the Regal Aliante page still lists IMAX showtimes and doesn't yet mention a Premium Experience conversion.
The Aliante work is part of a larger Boyd effort across the valley. Boyd bought the property for $380 million in 2016, eight years after Station Casinos opened it in 2008. During Boyd's second-quarter earnings call on July 23, 2026, CEO Keith Smith said that "by early next year, we will have renovated over 70 percent of our Las Vegas hotel room inventory, introduced 17 new food and beverage concepts," according to the Review-Journal. Those numbers cover all of Boyd's Las Vegas properties, not just Aliante. They help explain why Aliante's changes keep coming in steps.
Two shows coming to the Access Showroom pair well with a dinner reservation. Check the table above for which restaurants are open that night.
- Saturday, November 7, 8 p.m.: "A Night of Laughs!" with Paul Rodriguez, Michael Winslow and Amy Ashton. Both dinner rooms are open on Saturdays.
- Friday, December 18, 8 p.m.: "A Very Bublé Christmas." Both MRKT and Trattoria 57 serve until 10 p.m. that night.
